Amanda’s Dairy-free, Nut-free, Egg-free, Chocolate Chip Cupcakes

Ingredients

  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup dairy-free margarine
  • 1 cup water
  • 1 1/2 Tablespoons water
  • 1 teaspoon baking powder
  • 1 1/2 Tablespoons vegetable oil or canola oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 3/4 cup to 1 cup Amanda's Own chocolate chips

Instructions

  • Preheat oven to 400 degrees F
  • In a large bowl, combine all the ingredients, except for the flour and chocolate chips
  • Once mixed well, stir in the chocolate chips
  • Mix in the flour and combine well
  • Line muffin tins with paper liners
  • Fill muffin tins 2/3 full
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
  • Remove to a wire rack to cool
  • Frost and decorate once cooled
