Amanda’s Dairy-free, Nut-free, Egg-free, Chocolate Chip Cupcakes
Ingredients
- 1 cup sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup dairy-free margarine
- 1 cup water
- 1 1/2 Tablespoons water
- 1 teaspoon baking powder
- 1 1/2 Tablespoons vegetable oil or canola oil
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups flour
- 3/4 cup to 1 cup Amanda's Own chocolate chips
Instructions
- Preheat oven to 400 degrees F
- In a large bowl, combine all the ingredients, except for the flour and chocolate chips
- Once mixed well, stir in the chocolate chips
- Mix in the flour and combine well
- Line muffin tins with paper liners
- Fill muffin tins 2/3 full
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
- Remove to a wire rack to cool
- Frost and decorate once cooled
